Amiata Mushrooms

You can find mushrooms all over the mountain. To go mushrooming you have to do a card. You can take it at the town hall. The pore mushroom is the rarest.

A Recipe :

Tagliatelle with Mushrooms

Prepare a soffritto with olive oil and very finely chopped onion. When onion are just tender, add the sliced mushrooms, sauté for 2 min., add the broth, reduce by one third, add salt and pepper to taste. Remove from fire. Cook the tagliatelle in plenty of boiling salted water. When al dente toss in a large skillet with the mushroom sauce and the butter. Add a few tbs. of cooking water if too dry. Dish into a serving bowl and serve with Parmigiano on the side.

The history :

In the past people doesn’t like very much mushrooms. Mushrooms come into fashion in the 50s when tourists discovered our territory. Today mushrooms are an estimate dish and mushrooms’ lovers and searchers are increasing. In September you can see the mountain plenty of people looking for mushrooms!
